Stick to a web theme that exemplifies your business. For example an interior decorator website should make use of different matching colours and fonts because of its creative environment.

Fonts should also be used to enhance the custom look of your webiste. A simple sans-serif font would be best in most cased. Some cases such as design and art websites might want to use a more creative font. But with those font's there is a high chance that the regular website user will not have that font installed.
